Aperture Farm "Non portrait" Kyoho 2023Whole bunch in plastic tanks for 10 days. After foot stomping, the grapes are placed in barrels for a 9 day fermentation period. After a 9 day fermentation period, the grapes were put into barrels and aged in barrels for 11 months. Bottled with a 5% blend of our own Merlot at bottling time. Wild yeast, no sulfites.
