Domaine Nakajima Cabernet Franc 2022The wine is fully hand de stemmed and goes through spontaneous fermentation with wild yeasts. After 2. 5 weeks of vinification and fermentation, the juice is slowly pressed in a hydraulic basket press, matured for 10 months in used 225L barrels and 15 ppm sulphites added just before bottling. the Skin contact was done with whole bunches for just under a month

The wine was aged in these barrels for 14 months before being racked for blending
